Ingredients

- 2 apples (such as Honeycrisp or Fuji), thinly sliced
- 3 oz Manchego cheese, shaved or thinly sliced
- 2 tbsp apple cider vinegar
- 1 tsp Dijon mustard
- 1 tsp honey
- 1/4 cup olive oil
- Salt to taste
- Black pepper to taste
Instructions
- Wash and dry the arugula thoroughly and place it in a large salad bowl.
- Thinly slice the apples and add them to the bowl with the arugula.
- Shave or thinly slice the Manchego cheese and scatter over the salad.
- In a small bowl or jar, whisk together apple cider vinegar, Dijon mustard, honey, salt, and black pepper.
- Slowly drizzle in olive oil while whisking until the dressing emulsifies.
- Pour the cider vinaigrette over the salad just before serving and toss gently to combine.
