Description

A crisp and vibrant salad combining peppery arugula, sweet apples, and nutty Manchego cheese with a tangy cider vinaigrette.


Ingredients

  • 5 oz arugula
  • 2 apples (such as Honeycrisp or Fuji), thinly sliced
  • 3 oz Manchego cheese, shaved or thinly sliced
  • 2 tbsp apple cider vinegar
  • 1 tsp Dijon mustard
  • 1 tsp honey
  • 1/4 cup olive oil
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Wash and dry the arugula thoroughly and place it in a large salad bowl.
  2. Thinly slice the apples and add them to the bowl with the arugula.
  3. Shave or thinly slice the Manchego cheese and scatter over the salad.
  4. In a small bowl or jar, whisk together apple cider vinegar, Dijon mustard, honey, salt, and black pepper.
  5. Slowly drizzle in olive oil while whisking until the dressing emulsifies.
  6. Pour the cider vinaigrette over the salad just before serving and toss gently to combine.
  7. Serve immediately to enjoy the crisp textures and bright flavors.
