Description

Arrabbiata Sauce is a fiery Italian tomato sauce packed with garlic, red chili flakes, and rich tomatoes. It’s a quick, bold, and spicy addition to your pasta night.

Ingredients

Scale
  • 2 tablespoons olive oil
  • 4 cloves garlic, sliced
  • 1 teaspoon crushed red pepper flakes (adjust to taste)
  • 1 can (28 oz) whole plum tomatoes (preferably San Marzano)
  • Salt to taste
  • 1 tablespoon fresh parsley, chopped (optional)
  • 1 tablespoon fresh basil, chopped (optional)

Instructions

  1. Heat olive oil in a saucepan over medium heat.
  2. Add sliced garlic and sauté until fragrant but not browned.
  3. Stir in red pepper flakes and cook for 30 seconds to release their aroma.
  4. Add canned tomatoes, breaking them up with a spoon or your hands.
  5. Season with salt and bring to a simmer.
  6. Cook for 20-25 minutes, stirring occasionally, until thickened.
  7. Taste and adjust seasoning or spice level as needed.
  8. Stir in chopped parsley or basil just before serving, if desired.

Notes

  • Add a splash of red wine for depth of flavor.
  • Include chopped onions for added sweetness and body.
  • Use fresh tomatoes in season for a lighter flavor.
  • Blend the sauce for a smoother consistency.
  • Top with grated Pecorino Romano for a salty finish.
