Description

A crisp and refreshing salad featuring sweet apples, fresh spinach, nuts, cheese, and a tangy homemade vinaigrette. Perfect as a side or a light meal.

Ingredients

Scale
  • 6 cups fresh baby spinach
  • 2 apples (such as Honeycrisp or Fuji), thinly sliced
  • 1/2 small red onion, thinly sliced
  • 1/3 cup crumbled feta or goat cheese
  • 1/3 cup toasted pecans or walnuts
  • 1/4 cup dried cranberries
  • 1/4 cup olive oil
  • 2 tbsp apple cider vinegar
  • 1 tsp Dijon mustard
  • 1 tsp honey
  • Salt and black pepper to taste

Instructions

  1. In a large salad bowl, combine the baby spinach, sliced apples, red onion, dried cranberries, cheese, and toasted nuts.
  2. In a small bowl or jar, whisk together olive oil, apple cider vinegar, Dijon mustard, honey, salt, and pepper until well combined and emulsified.
  3. Drizzle the vinaigrette over the salad just before serving.
  4. Toss gently to coat all ingredients evenly.
  5. Serve immediately for the best taste and texture.

Notes

  • To make it a full meal, add grilled chicken or chickpeas.
  • For variation, use pears instead of apples or try blue cheese instead of feta or goat cheese.
  • Avocado adds creaminess, while balsamic vinaigrette offers a flavor twist.
