Description

Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 cup (2 sticks) unsalted butter, cold and cubed
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 6 cups apples (such as Granny Smith or Honeycrisp), peeled and sliced
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground allspice
  • 2 tablespoons cornstarch
  • 1/2 teaspoon salt
  • 68 tablespoons ice water
  • 1 egg (for egg wash)
  • Optional: Additional sugar for sprinkling

Instructions

  1. Preheat oven to 425°F (220°C) and place rack in lower third of oven.
  2. In a bowl, mix flour and salt. Cut in cold butter until mixture resembles coarse crumbs. Add ice water one tablespoon at a time until dough forms.
  3. Divide dough in half, shape into discs, wrap in plastic wrap, and chill for at least 30 minutes.
  4. Peel, core, and slice apples. Toss with lemon juice, granulated sugar, brown sugar, spices, cornstarch, and a pinch of salt.
  5. Roll out one dough disc and fit into a 9-inch pie pan. Fill with apple mixture, mounding in the center.
  6. Roll out the second dough disc, place over filling, trim and crimp edges. Cut slits in top for steam to escape.
  7. Brush top crust with beaten egg and sprinkle with sugar if desired.
  8. Place pie on baking sheet and bake for 45-55 minutes until golden and bubbling.
  9. Cool pie for at least 2 hours before serving.
