- 2 1/2 cups all-purpose flour
- 1 cup (2 sticks) unsalted butter, cold and cubed
- 1/4 cup granulated sugar
- 1/4 cup brown sugar
- 6 cups apples (such as Granny Smith or Honeycrisp), peeled and sliced
- 1 tablespoon lemon juice
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground allspice
- 2 tablespoons cornstarch
- 1/2 teaspoon salt
- 6–8 tablespoons ice water
- 1 egg (for egg wash)
- Optional: Additional sugar for sprinkling
Instructions
- Preheat oven to 425°F (220°C) and place rack in lower third of oven.
- In a bowl, mix flour and salt. Cut in cold butter until mixture resembles coarse crumbs. Add ice water one tablespoon at a time until dough forms.
- Divide dough in half, shape into discs, wrap in plastic wrap, and chill for at least 30 minutes.
- Peel, core, and slice apples. Toss with lemon juice, granulated sugar, brown sugar, spices, cornstarch, and a pinch of salt.
- Roll out one dough disc and fit into a 9-inch pie pan. Fill with apple mixture, mounding in the center.
- Roll out the second dough disc, place over filling, trim and crimp edges. Cut slits in top for steam to escape.
- Brush top crust with beaten egg and sprinkle with sugar if desired.
- Place pie on baking sheet and bake for 45-55 minutes until golden and bubbling.
- Cool pie for at least 2 hours before serving.
