- 300g pasta (any type)
- 2 tbsp olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 200g Turkish red pepper paste (or tomato paste)
- 1 tsp paprika
- 1/2 tsp chili flakes
- 1/2 tsp black pepper
- Salt to taste
- 150g Greek yogurt
- 50ml pasta water (reserved)
- Fresh parsley, chopped (for garnish)
- Grated parmesan (optional, for garnish)
Instructions
- Boil pasta in salted water according to package instructions; reserve 50ml pasta water before draining.
- Heat olive oil in a pan over medium heat; sauté onions until translucent.
- Add garlic and cook for another minute.
- Stir in Turkish red pepper paste, paprika, chili flakes, black pepper, and salt; cook for 2-3 minutes.
- Add the drained pasta to the pan, tossing to coat with the sauce.
- Mix Greek yogurt with a bit of reserved pasta water to loosen it, then stir it into the pasta off the heat.
- Garnish with chopped parsley and optional grated parmesan.
- Serve immediately and enjoy!
Notes
- Use a mild or spicy red pepper paste depending on your heat preference.
- Reserve more pasta water if you want a creamier consistency.
- Swap Greek yogurt for a plant-based yogurt for a vegan version.
