- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened

- 2 egg yolks
- 1 tsp almond extract

- 24 sliced almonds (for topping)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream the butter and sugar together until light and fluffy.
- Add the egg yolks and almond extract, mixing until fully combined.
- In a separate bowl, whisk together the almond flour, all-purpose flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until a soft dough forms.
- Scoop and shape the dough into small balls, then slightly flatten them.
- Press a sliced almond onto the top of each cookie.
- Place on the prepared baking sheet and bake for 12–15 minutes, or until the edges are lightly golden.
- Let the cookies cool on the sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
- Use whole almonds or almond slivers for a different topping texture.
- Dip half of each cookie in melted dark chocolate for a decadent touch.
