Description

Ingredients

  • 1 cup almond flour
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 egg yolks
  • 1 tsp almond extract
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 24 sliced almonds (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream the butter and sugar together until light and fluffy.
  3. Add the egg yolks and almond extract, mixing until fully combined.
  4. In a separate bowl, whisk together the almond flour, all-purpose flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until a soft dough forms.
  6. Scoop and shape the dough into small balls, then slightly flatten them.
  7. Press a sliced almond onto the top of each cookie.
  8. Place on the prepared baking sheet and bake for 12–15 minutes, or until the edges are lightly golden.
  9. Let the cookies cool on the sheet for 5 minutes before transferring to a wire rack to cool completely.
