Ingredients

Scale
  • 2 cups cooked turkey, chopped
  • 4 cups cubed bread
  • 2 large eggs, beaten
  • 1 medium onion, chopped
  • 2 celery stalks, chopped
  • 2 tbsp butter
  • 1 cup chicken broth
  • 2 cups mashed potatoes
  • 2 cups green beans (fresh, blanched or canned, drained)
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/4 cup water or extra broth (to thin soup)
  • 1 cup shredded cheddar cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp dried thyme
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. In a skillet, melt butter and sauté chopped onion and celery until tender.
  3. In a large bowl, combine cooked turkey, sautéed vegetables, cubed bread, beaten eggs, garlic powder, onion powder, dried thyme, salt, pepper, and chicken broth. Mix well to form stuffing.
  4. Spread the stuffing mixture evenly into the prepared baking dish.
  5. Layer mashed potatoes over the stuffing and smooth with a spatula.
  6. Top with green beans.
  7. In a small bowl, mix cream of mushroom soup with water or broth to thin slightly. Pour evenly over casserole.
  8. Sprinkle shredded cheddar cheese on top.
  9. Bake uncovered for 30–35 minutes until hot and bubbly and the cheese is golden.
  10. Let cool slightly before serving.

Notes

  • Use sweet potatoes for a sweeter twist.
  • Try cranberry sauce between layers for contrast.
  • Substitute peas or corn for green beans if desired.
  • Use gravy instead of mushroom soup for richer flavor.
  • Add crispy fried onions for crunch.
