- 2 medium sweet potatoes
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup canned black beans, drained and rinsed
- 1/2 cup corn kernels (fresh, frozen, or canned)
- 1/4 cup diced red onion
- 1/4 cup chopped fresh cilantro
- 1/4 cup sour cream or Greek yogurt
- 1/4 cup shredded cheese (optional)
- 1/2 teaspoon chili powder
- 1/2 teaspoon cumin
- 1 tablespoon lime juice
Instructions
- Wash and scrub the sweet potatoes, then pierce them several times with a fork.
- Rub sweet potatoes with olive oil, salt, and pepper.
- Place sweet potatoes in the air fryer basket and cook at 390°F (200°C) for 35-40 minutes, or until tender.
- While the sweet potatoes cook, prepare the filling by combining black beans, corn, red onion, cilantro, chili powder, cumin, lime juice, and shredded cheese (if using) in a bowl.
- Once the sweet potatoes are cooked, slice them open lengthwise and fluff the inside with a fork.
- Stuff each sweet potato with the prepared filling.
- Top with a dollop of sour cream or Greek yogurt before serving.

- You can customize the filling with your favorite veggies or protein.
- Vegan option: Use plant-based yogurt and omit cheese or use vegan cheese.
- Leftovers can be stored in the fridge for up to 3 days.
