Description

Delicious and healthy air fryer stuffed sweet potatoes, perfect as a hearty vegetarian meal or side dish, packed with nutritious toppings and bold flavors.


Ingredients

  • 2 medium sweet potatoes
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup canned black beans, drained and rinsed
  • 1/2 cup corn kernels (fresh, frozen, or canned)
  • 1/4 cup diced red onion
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup sour cream or Greek yogurt
  • 1/4 cup shredded cheese (optional)
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1 tablespoon lime juice

Instructions

  1. Wash and scrub the sweet potatoes, then pierce them several times with a fork.
  2. Rub sweet potatoes with olive oil, salt, and pepper.
  3. Place sweet potatoes in the air fryer basket and cook at 390°F (200°C) for 35-40 minutes, or until tender.
  4. While the sweet potatoes cook, prepare the filling by combining black beans, corn, red onion, cilantro, chili powder, cumin, lime juice, and shredded cheese (if using) in a bowl.
  5. Once the sweet potatoes are cooked, slice them open lengthwise and fluff the inside with a fork.
  6. Stuff each sweet potato with the prepared filling.
  7. Top with a dollop of sour cream or Greek yogurt before serving.

Notes

  • You can customize the filling with your favorite veggies or protein.
  • Vegan option: Use plant-based yogurt and omit cheese or use vegan cheese.
  • Leftovers can be stored in the fridge for up to 3 days.
