Description

These Air Fryer Southwest Egg Rolls are a crispy, flavorful appetizer filled with a zesty mix of vegetables, beans, and cheese. A healthier twist on the classic, they’re perfect for snacking or entertaining.


Ingredients

  • 1 tablespoon olive oil
  • 1/2 cup red bell pepper, diced
  • 1/2 cup green bell pepper, diced
  • 1/2 cup onion, diced
  • 1 cup frozen corn, thawed
  • 1 cup black beans, drained and rinsed
  • 1 cup baby spinach, chopped
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 12 egg roll wrappers
  • Olive oil spray

Instructions

  1. Heat olive oil in a skillet over medium heat. Add bell peppers and onion, sauté for 3-4 minutes.
  2. Add corn, black beans, spinach, chili powder, cumin, garlic powder, salt, and pepper. Cook for 2-3 minutes until spinach wilts.
  3. Remove from heat and stir in shredded cheese. Let mixture cool slightly.
  4. Place about 2 tablespoons of filling in the center of each egg roll wrapper. Fold the sides and roll tightly, sealing the edge with water.
  5. Preheat air fryer to 370°F (190°C).
  6. Lightly spray egg rolls with olive oil spray and place in a single layer in the air fryer basket.
  7. Cook for 8-10 minutes, turning halfway through, until golden and crispy.
  8. Serve with your favorite dipping sauce.

Notes

  • You can substitute spinach with kale or omit it entirely.
  • For a spicier version, add diced jalapeños or hot sauce to the filling.
  • Freeze extra rolls before air frying for a quick snack later.
