- 1 tablespoon olive oil
- 1/2 cup red bell pepper, diced
- 1/2 cup green bell pepper, diced
- 1/2 cup onion, diced
- 1 cup frozen corn, thawed
- 1 cup black beans, drained and rinsed
- 1 cup baby spinach, chopped
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
- 12 egg roll wrappers
- Olive oil spray
Instructions
- Heat olive oil in a skillet over medium heat. Add bell peppers and onion, sauté for 3-4 minutes.
- Add corn, black beans, spinach, chili powder, cumin, garlic powder, salt, and pepper. Cook for 2-3 minutes until spinach wilts.
- Remove from heat and stir in shredded cheese. Let mixture cool slightly.
- Place about 2 tablespoons of filling in the center of each egg roll wrapper. Fold the sides and roll tightly, sealing the edge with water.
- Preheat air fryer to 370°F (190°C).
- Lightly spray egg rolls with olive oil spray and place in a single layer in the air fryer basket.
- Cook for 8-10 minutes, turning halfway through, until golden and crispy.
- Serve with your favorite dipping sauce.
Notes
- You can substitute spinach with kale or omit it entirely.
- For a spicier version, add diced jalapeños or hot sauce to the filling.
- Freeze extra rolls before air frying for a quick snack later.
