Description

Juicy and flavorful chicken breast with a perfectly crispy coating, made easily in an air fryer with minimal oil.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup buttermilk
  • 1 cup breadcrumbs (panko preferred)
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil spray

Instructions

  1. Pound the chicken breasts to even thickness for uniform cooking.
  2. Place the chicken in a bowl with the buttermilk and marinate for at least 30 minutes.
  3. In another bowl, mix the breadcrumbs, Parmesan, garlic powder, onion powder, paprika, salt, and pepper.
  4. Remove chicken from the marinade and let the excess drip off.
  5. Press the chicken into the breadcrumb mixture, coating all sides evenly.
  6. Preheat the air fryer to 375°F (190°C).
  7. Spray both sides of the chicken with olive oil spray.
  8. Place the chicken in the air fryer basket in a single layer.
  9. Air fry for 10 minutes, flip, then cook for another 8-10 minutes or until golden and internal temperature reaches 165°F (74°C).
  10. Remove and let rest for a few minutes before serving.

Notes

  • Do not overcrowd the air fryer basket; cook in batches if needed.
  • Use a meat thermometer to ensure chicken is fully cooked.
  • Panko breadcrumbs give a crispier texture than regular breadcrumbs.
