- 2 boneless, skinless chicken breasts
- 1 cup buttermilk
- 1 cup breadcrumbs (panko preferred)
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil spray
Instructions
- Pound the chicken breasts to even thickness for uniform cooking.
- Place the chicken in a bowl with the buttermilk and marinate for at least 30 minutes.
- In another bowl, mix the breadcrumbs, Parmesan, garlic powder, onion powder, paprika, salt, and pepper.
- Remove chicken from the marinade and let the excess drip off.
- Press the chicken into the breadcrumb mixture, coating all sides evenly.
- Preheat the air fryer to 375°F (190°C).
- Spray both sides of the chicken with olive oil spray.
- Place the chicken in the air fryer basket in a single layer.
- Air fry for 10 minutes, flip, then cook for another 8-10 minutes or until golden and internal temperature reaches 165°F (74°C).
- Remove and let rest for a few minutes before serving.
Notes
- Do not overcrowd the air fryer basket; cook in batches if needed.
- Use a meat thermometer to ensure chicken is fully cooked.
- Panko breadcrumbs give a crispier texture than regular breadcrumbs.
