Description

A healthy and flavorful one-pan meal featuring lemon herb salmon and tender zucchini, ready in just 30 minutes.


Ingredients

  • 4 salmon fillets (about 6 oz each)
  • 2 medium zucchinis, sliced into half-moons
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 2 teaspoons dried Italian herbs
  • 3 cloves garlic, minced
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Lemon wedges (for serving)


Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a small bowl, mix olive oil, lemon juice, lemon zest, Italian herbs, minced garlic, salt, and pepper.
  3. Place the salmon fillets and zucchini slices on a large baking sheet lined with parchment paper.
  4. Drizzle the lemon herb mixture over the salmon and zucchini. Toss the zucchini to coat evenly.
  5. Bake for 15-18 minutes, or until the salmon is cooked through and flakes easily with a fork.
  6. Garnish with fresh parsley and serve with lemon wedges.
