Description

This quick and easy California Sushi Bowl has all the flavors of your favorite sushi roll—without the rolling! It’s fresh, light, and perfect for a fast lunch or dinner. With just a few ingredients and only 10 minutes of prep, you’ll have a satisfying meal full of texture and flavor. Think seasoned rice, crisp veggies, creamy avocado, imitation crab, and a drizzle of spicy mayo.


Ingredients

  • 2 cups cooked sushi rice (or jasmine rice), warm

  • 1 tablespoon rice vinegar

  • 1 teaspoon sugar

  • 1/2 teaspoon salt

  • 1 cup imitation crab meat, shredded

  • 1 avocado, diced

  • 1/2 cucumber, diced

  • 1/2 cup shredded carrots

  • 1/4 cup chopped green onions

  • 1 tablespoon sesame seeds

  • 1 sheet nori, cut into strips or crumbled

  • Soy sauce, to taste

  • Spicy mayo (2 tbsp mayo + 1 tsp sriracha), optional


Instructions

  1. In a small bowl, mix rice vinegar, sugar, and salt. Pour over the warm rice and stir to combine. Let it cool slightly.

  2. Divide the rice between two bowls.

  3. Top each bowl with shredded crab, avocado, cucumber, carrots, green onions, and sesame seeds.

  4. Add crumbled nori on top.

  5. Drizzle with soy sauce and spicy mayo if using.

  6. Serve immediately and enjoy!


Notes

  • You can swap imitation crab for real crab, shrimp, or even tofu for a vegetarian version.

  • Add pickled ginger or wasabi for an extra sushi kick.

  • Great for meal prep—just store toppings separately and assemble when ready to eat.
